HOW TO MAKE BUTTERNUT SQUASH SOUP



Colder weather means soup! We're sharing how to make a delicious Butternut Squash soup with one of our favorite plant-based products:
Planet Oat Oatmilk!


WHAT YOU NEED:

  • 1 Butternut Squash, peeled, halved, and seeded

  • 1 sweet Onion, medium dice

  • 2 Carrots, medium deice

  • 3 Celery Sticks, medium dice

  • 2 cups of Planet Oat Oatmilk, Original

  • One 32oz of Vegetable Broth

  • 2 tsp of Extra Virgin Olive Oil

  • 2 gloves of garlic, medium dice

  • 1/4 tsp Salt

  • Pepper

  • Croutons

  • Pumpkin Seeds


HOW TO MAKE:

  • Preheat your oven to 400 degrees.

  • Cut your Butternut Squash into bite-sized chunks and place them on a baking pan.

  • Drizzle a generous amount of olive oil onto the Butternut Squash.

  • Sprinkle some salt and pepper onto it.

  • Bake it in the oven for about 45 minutes to an hour.

  • In another pot, add chopped onions and cook them until they're translucent.

  • Thinly chop celery and carrots, add them to the pot and stir.

  • Add the chopped garlic to the pot and stir. Keep stirring until all the pot ingredients are softened.

  • When the Butternut Squash is cooked, add it to the pot.

  • Add in some vegetable broth. Bring the broth to a boil, then reduce the simmer.

  • Stir in the Planet Oat Oatmilk.

  • Once everything reaches a slight simmer, add it all into a blender and blend it until it is smooth.

  • Add your soup to a bowl and garnish it with croutons pumpkin seeds.

  • Serve and enjoy!
